Pumpkin Spice and Everything Nice

I can’t promise that this will be the last pumpkin recipe (I still have some saved in my freezer)…but it certainly is one of the best! In the last years, Friendsgiving, has become increasingly more popular. A time before Thanksgiving, typically spent with family, to gather friends and throw down in an epic potluck. Mostly an excuse to eat more pie. I look it was a way to prepare my stomach for the main day! Or at least that is what I tell myself.

Change of Seasons: Snow is Here!

Snow has arrived in Boulder, Colorado! Well, technically it did as it is all gone now. The magic of this state and the changing seasons that go from week to week and day to day. On Wednesday we were all informed that it was going to snow on Thursday which was hard to believe given that it was in the upper sixties and there was nothing but clouds and sunshine.

Even though it isn’t Fourth of July, I thought that this morning I would share one of my favorite recipes that EVERYONE can eat. It seems like in Boulder that everyone has some sort of food allergy and this recipe for a yummy dessert is accessible to everyone and very easy to make! It is also incredibly yummy, healthy and can be made for any holiday based on the fruit decorations on top!

Where Have I Been: Vietnam 2015

As a break draws closer (Thanksgiving break can’t come soon enough!), I wanted to reflect on a trip that I took almost a year ago to Vietnam. I was hired as an adult adoptee mentor for a travel group that takes adoptees and their families back to their birth countries. As an adoptee myself who has gone back to China, it was a very moving experience where I learned a lot. While a large part of the trip didn’t go as I planned or expected, that’s part of life; learning to accept yourself, adapt to unexpected situations and learn from every experience.
